(Adnkronos) - "La medicina di oggi deve chiedersi 'cosa possiamo fare per far sì che le persone non diventino pazienti?'. Alla risposta a questa domanda può contribuire la medicina di precisione, che presuppone un approccio predittivo e, dunque, di prevenzione. In questo senso, la personalizzazione e la partecipazione del paziente è fondamentale, così come l’anamnesi del paziente e familiare. Bisogna studiare la persona, pensare in modo preciso e funzionale. Avere un approccio funzionale alla nutrizione significa approcciare le funzioni organiche". Così Sara Farnetti, specialista in Medicina interna, nel corso del suo intervento 'Nutrizione precisa e funzionale per investire in salute e longevità sana', all'interno del panel 'Controllo del peso per un invecchiamento di successo' che ha chiuso la seconda giornata del 5° congresso internazionale "Healthy lifespan - positive nutrition, antiinflammation diet, physical activity and sport", organizzato da Fondazione Paolo Sorbini, e promosso da Enervit e Technogym, a Palazzo Mezzanotte a Milano.Â
"La strategia che funziona è una strategia precisa per la persona - aggiunge Farnetti - e si applica a tutte le diverse tipologie di diete. In questo contesto è cruciale studiare lo stato delle funzioni organiche e cosa si mette nel piatto è secondario. È la funzione che fa l’organo e la funzione va agevolata e stimolata per la salute dell’organismo". Secondo l’esperta "bisogna fare attenzione alla preparazione dei pasti, ai metodi di cottura e all’associazione degli alimenti per avere una nutrizione funzionale". Â
La cottura in olio, ad esempio, "ha azione coleretica, seleziona il microbiota, regola il sistema immunitario, velocizza i processi digestivi e riduce l’indice glicemico del pasto - assicura Farnetti - Un pasto a base di riso scondito e un mela, invece, costituito di amidi, glucosio e fruttosio che stimolano la secrezione insulinica, favorisce l’infiammazione, il meteorismo e l’accumulo di massa grassa e di sodio, rallenta lo svuotamento intestinale e ha un basso indice di sazietà . Quando si manteca la pasta cotta con olio evo caldo ed erbe aromatiche, il pasto non solo ha un indice insulinico più contenuto, ma anche effetto coleretico, azione antiossidante ed epigenetica". “Se si rende funzionale una dieta ipocalorica inserendo cacao, olio evo, noci e semi, si ottiene una dieta con lo stesso numero di calorie ma con effetto coleretico, un’azione epigenetica, remineralizzante, antiossidante e con controllato indice insulinico" concludeÂ
